Mini Honey, Garlic and Cheddar Biscuits




These biscuits may just be better than Red Lobsters Cheddar Bay Biscuits. Bold statement, but these mini biscuits are super soft and garlicky, with the addition of a sweet honey butter lathered on top when hot. Making them mini gives them a crisp-but-fluffy-as-air-texture, and they quite literally melt in your mouth. Try these next time you make any type of seafood!


 

Mini Honey, Garlic and Cheddar Biscuits


Prep Time: 15minutes Cook Time: 10-12 minutes Yield: 29-32 biscuits


INGREDIENTS


For the Biscuits

  • 2 cups flour

  • 1 tbs sugar

  • 1 tbs baking powder

  • 1 tbs granulated garlic powder

  • 1 tbs dried parsley

  • 3/4 teaspoon salt

  • 1 cup heavy cream

  • 1/2 cup butter, melted

  • 1/2 cup cheddar cheese, grated

For the Honey Butter

  • 3 tablespoons butter, melted

  • 1 tbs honey

  • 1/2 tsp old bay

  • 1/4 tsp garlic powder

  • 1/2 tsp salt

  • 1 tsp dried parsley


DIRECTIONS

  1. Preheat the oven to 425 F. In a mixing bowl, combine the flour, sugar, baking powder, granulated garlic powder, dried parsley and salt. Mix well to combine.

  2. Add the heavy cream and melted butter, and mix until the flour just starts to get a little wet. Add the cheddar cheese and mix again, then dump the dough on to a clean surface. Knead until a dough is formed (it doesn't take long - between 15-20 kneads).

  3. Roll the dough out to 1/2 an inch thick. Using a round cookie cutter, cut into 2 1/4 inch rounds. Re roll the dough and repeat this step until all of the dough has been made into small rounds.

  4. Place the biscuits on two parchment lined baking trays. Bake for 10-12 minutes on the middle rack, or until golden.

  5. While the biscuits are baking, make the honey butter. Combine all of the ingredients for the honey butter in a small bowl. Mix well. Using a pastry brush, brush the butter on to the biscuits as soon as they come out of the oven. Serve immediately.
