Bacon, Cheddar and Chive Savoury Oats

INGREDIENTS
3 slices bacon, finely chopped
1 tsp olive oil
2 cloves garlic, minced
1/2 tsp chili powder (optional)
1 tsp garlic powder
1 cup rolled oats
1 & 1/4 cup broth of choice or water
3/4 cup milk of choice (I used almond milk)
Salt and pepper to taste
Juice of 1/2 a lemon or lime
1 cup cheddar cheese, grated
3 tbs chives, minced
2 fried eggs, to top
Minced white onion, to top
Minced jalapeño, to top
Fresh cilantro, to top
Sliced avocado, to top
DIRECTIONS
Over medium low in a medium sized saucepan, crisp up the bacon in the olive oil. Once the bacon is crisp (5-7 mins, stirring often), remove from pan with slotted spoon, leaving the grease in the pot.
To the hot grease, add the garlic, chili powder, and garlic powder, and sauté stirring often for 30-45 seconds, making sure not to burn the garlic.
Add the oats and sauté another 45-60 seconds, stirring often, to toast the oats, then add the water/broth, milk of choice, and salt and pepper to taste.
Simmer for 5-7 mins till the oatmeals thickens. At this point, if you want a thinner consistency oatmeal, add more water, 1 tbs at a time, until it reaches desired consistency. Stir in the cheese, chives, and lemon juice, and remove from heat.
To serve, divide the oatmeal into bowls. Top with fried eggs, minced white onion, minced jalapeño, fresh cilantro, and sliced avocado.
