If I could, I would replace all my meals with breakfast. I must have breakfast for dinner at least twice a week. I came up with this recipe when I was craving something sweet and savoury. Even though they are packed with surprising ingredient, these waffles are quite neutral. You can have them with eggs and sausage, chicken, or simply with maple syrup and whipped cream. Dress them up or down, these simple waffles (made with pancake mix) are an easy fix for any meal you decide to eat them at.
Makes 5-6 waffles
Ingredients:
2 cups pancake mix
1 1/2 cup milk
1 tbs cornstarch
1 egg
2 tbs vegetable oil or melted butter
1 cup shredded cheddar cheese
1 apple, chopped
1/2 tsp vanilla extract
Cooking spray
Maple syrup, to serve
Directions:
1. Heat a waffle maker on high while you prepare waffle batter. In a medium mixing bowl, whisk together pancake mix, milk, oil or butter and egg until well combined. Add in shredded cheese, chopped apple, and the vanilla extract, and stir with a spatula or wooden spoon.
2. Spray the hot waffle iron with cooking spray. Pour 1/3 - 1/2 cup batter onto center of hot waffle iron, and spread out a little. Close lid of waffle maker. Cook until steam stops and waffle is golden brown; about 8-10 minutes (this can vary by waffle iron). Carefully remove waffle. Repeat with remaining batter. Serve with maple syrup if desired.
